Troubleshooting Remedies

Answers to common baking challenges.

Why did my cake sink in the middle?
  • Too much leavening agent: Excess baking powder creates rapid gas bubbles that collapse before the cake structure sets.
  • Underbaking: Always test with a skewer in the center; it must emerge completely clean.
  • Opening the oven door too early: Inrush of cool air breaks the thermal lift before batter structure firms up.
  • Overmixing: Incorporating excess air weakens the flour matrix.
Why are my tea buns hard and dense?
  • Excess flour: Always spoon and level or weigh flour rather than scooping directly with a measuring cup.
  • Rushed proofing: Yeast dough requires sufficient rest time at room temperature to develop gas pockets.
  • Overbaking: Remove buns as soon as tops reach a light golden color; residual heat continues cooking on the tray.
Why are my doughnuts absorbing too much oil?
  • Low oil temperature: Frying below 175°C (350°F) causes dough to soak up oil rather than seaming the exterior instantly.
  • Over-proofing: Dough that expanded too long loses internal pressure and absorbs oil quickly.
Why did my buttercream curd or split?
  • Temperature mismatch: Butter and liquid/sugar components must all be at room temperature before beating.
  • Fixing split buttercream: Gently warm the base of the mixing bowl over a warm water bath for 15 seconds, then beat rapidly.
Why is my sponge cake dry?
  • Overbaking: Check cakes 5 minutes before the recipe time; internal heat drys out moisture rapidly.
  • Incorrect flour type: High-protein bread flours draw moisture away; stick to cake or refined wheat flour.

Edible Print Guide

4 Steps to a flawless edible print application.

Step 1

Prepare Surface

Apply a smooth layer of buttercream or fondant onto your cake to create a clean, level foundation.

Step 2

Trim to Size

Carefully trim your edible print or gloss topper using clean kitchen scissors, leaving a tiny border.

Step 3

Apply & Smooth

Gently peel the plastic backing and place the image on the cake, smoothing light pressure from center to edge.

Step 4

Finish Details

Add piping or border trim around the edges to frame your edible print seamlessly into the cake design.
